Hello all! I am feeling extra festive today for our Fiesta Friday link up party. Why you ask? Could it be that it is finally Friday? I have to say I wasn’t sure about using pork instead of chicken or beef. Also had not thought about using kiwi as an ingredient in the salsa. But the kiwi salsa combined with the pork and Mexican spices = one tasty meal.
