Easter Poke Cake

Happy Friday everyone!  Hippity, hoppity, Easter’s on its way!  Are you ready for Easter at your house?  I know I am!

Easter has always been one of my favorite holidays.  As a girl growing up, I can remember I could not wait for Easter.  My Mom would always make my sister’s and I a new dress every year just for Easter, with all the pretty, frilly bows and lace and in the prettiest, softest of pastel colors.  We would usually get a new pair of Easter shoes and purse to go with our new dress.  I remember I could not wait to get up on Easter Sunday to go to church.  I would be so excited to wear my new dress, shoes and matching purse.  Then, after church, came the big Easter Egg Hunt and all the yummy food, and oh the desserts ….such good childhood memories.

Speaking of desserts and memories …I have an oh so very luscious Easter Pudding Poke Cake to share with y’all.  I also have an Easter story from my childhood to share, well it is sort of an Easter story …as in it does involve my new Easter purse  😉  But first, let us take a look at this mouth-watering cake.

Okay, I saw you drooling …I promise to share this wonderful, easy peasy recipe with you and everyone at our Fiesta Friday party.  But first, I promised you a story …

When I was in second grade I rode the bus to school, as we lived out in the country.  The bus would pick us up every morning at the same designated spot.  This spot was across the street from my house at a neighbors house.  Now, all of us kids knew that you wanted to be one of the first on the bus, to get the best seats, as the bus filled up quickly.  I was shy and did not like sitting with someone I did not know, so all the more important to be first.  When the bus came, we would all just run up to the edge of the driveway and form a line, all trying to be first …which turned into a lot of pushing and shoving, with the older kids always winning.  To avoid this, you would have to stand in line until the bus got there.  Well this did not go over well, as no one wanted to stand in line for that long.  So later, we devised a system; when you arrived at the bus stop you would put your school books, etc in a line and that saved your place.  This worked out well, until that one morning …

As I said earlier, my Mom usually bought us an Easter purse to go along with our dress.  This particular Easter I could not wait to have my purse, so my Mom let me have it early.  I loved it and just had to take it to school.  So off I went to the bus stop.  I set my books down to mark my place and my new easter purse.  All us kids were busy playing basketball and hopscotch on the driveway, so no one noticed that a stray dog had wandered up and was sniffing around our books.  Right as the bus was coming down the road and we were running up to get our place in line, the dog peed on my new Easter purse!!  All over it …he soaked it good!!  Well, the bus was there and I didn’t have time to think …I certainly didn’t want to miss the bus.  I loved the purse …so I picked it up, pee stain and all and carried it with me.  Everyone was laughing, I was so embarrassed, but I carried my purse all the way to school to the bathroom and tried to wash it off best I could.  Crying practically the entire time.  Needles to say it was ruined.  Lesson learned …Easter purses are for Easter Sunday …never put your new Easter purse down to save your place?  LOL,  well whatever the lesson is I feel I learned it well that day  🙂

This is a recipe my Mom used to make.  It is really so retro …so 70’s or before.   It is a light and delicious dessert, perfect for so many occasions.  It is a very versatile recipe.  You could do different flavors of jello and pudding with different cake mixes.  Yellow cake with chocolate pudding and cherry Jello.  And then the food coloring …I love food colors, you can be so creative.  The list goes on and on.  I used yellow in the icing and then a little green for the grass nest of eggs.  Whatever you do, you can make it your own.

This is a light and delicious cake. Perfect for any Easter gathering.  Be sure to make plenty, it goes fast!

What you need:

1 pkg.  (2-layer size) white cake mix

1 cup  boiling water

1 pkg.  (3 oz.) JELL-O Strawberry Flavor Gelatin

1/2 cup  cold water

1 tub  (8 oz.) COOL WHIP Whipped Topping, thawed

1 pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

Food coloring (I used yellow and green)

1 cup cold milk

Make It:

PREPARE cake batter and bake as directed on package for 13×9-inch pan. Cool cake in pan 15 min. poke cake with large fork or straw at 1/2-inch intervals.

ADD boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours or overnight.

BEAT  pudding mix and milk in large bowl with whisk 2 min.; stir in COOL WHIP and desired amount of food coloring.

FROST cake with COOL WHIP and pudding mixture. Refrigerate 1 hour before serving.
