Okay, I have to be honest here …this was not my favorite pumpkin bar recipe. Don’t get me wrong, there was nothing wrong with the recipe. They turned out good …I mean they look yummy and they taste good, that is I did not mess up the recipe etc. I guess I have never been a fan of smores and apparently it is no different with pumpkin smores. I guess it is the marshmallow thing. The only place I really like marshmallows is in my cocoa. I did, however, think that minus the marshmallows they were quite tasty, so I decided to go ahead and post. Just because I am not 100% sold on the whole smores thing DOES NOT mean you should not try this recipe if you are a fan of smores. Because ….
They have the same ooey gooey marshmallows as smores and are full of the delicious taste of pumpkin and chocolate. They are easy to make too! 🙂
They are definitely moist and gooey. I think they would be fun to make for Halloween. Perfect for the kids …what kid doesn’t like chocolate and marshmallows, right?!
Just make them for yourself and you be the judge! As for me, I am going to check out all the other delicious recipes brought by the wonderful group over at Angie’s, The Novice Gardener. Hungry? Come on join the fun!
Happy Fiesta Friday Everyone!!

Pumpkin Smores Bars
By: Arl’s World @ arlsworld.net
Makes 24 bars
Ingredients
1/2 cup butter, softened
1 cup brown sugar
1 cup pumpkin puree
2 eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cups chocolate chips
1 bag caramel vanilla marshmallows
Directions
- Beat the butter and sugar until creamy. Add the pumpkin, eggs and vanilla and beat again.
- Stir together the baking powder, salt, flour, cinnamon, and nutmeg. Slowly add to the butter mixture until a soft dough forms. Spread in a greased 9×13 baking pan.
- Bake at 350 degrees for 24 minutes. Remove from the oven and sprinkle the chocolate chips evenly over the top of the hot bars. Cover the chocolate chips with the marshmallows. Return to the oven and bake another 2 minutes. Turn on the broiler and broil for 1-2 minutes. You just want the marshmallows to start turning golden, so do not over broil them. Remove from the oven and cool completely.
- Use a wet knife to cut the bars into 24 squares. Be sure to wet the knife in between each cut. The water on the knife keeps the marshmallow from sticking.
My hubby loves smores, but he is a kid at heart. I can eat one or two outside in front of a fire and I’m good. Thank you for your honest interpretation! They do look gorgeous.

Hi Julie! Thank you! I think I could definitely eat some smores at the beach, in front of a bon fire. That somehow just all goes together. 🙂 Happy Weekend!

Me too Suchitra! I prefer them without the smores …just plain pumpkin bars. But I love to bake and try new things. Bake and learn! 🙂

I love smores since making them over a fire pit many years ago with the kids. I just saw a recipe for sweet potato smores, not so sure about that. But pumpkin – YES 🙂

Hi there! I am glad you would like them. Thank you 🙂 I think smores and campfire or bonfire on the beach just go together! As kids we always roasted marshallows and I ate them then. Happy Weekend!!

I’m a fan of s’mores, its the only time I like marshmallows is when it toasted or else its just chewy sticky pillows of sugar, nice touch with the pumpkin, perfect for the season, thanks for sharing:)

Hi Lily, yes, I think that is why I don’t like marshmallows on much, because they are sticky pillows of sugar. Good description! 🙂 Thank you so much! I hope you are having a good week.

Haha! Arl…who says we have to love everything we make? I totally understand what you mean, and I’m so glad you still shared them with everyone. I have meatloaf in the oven, and while I know that it’s really good. it’s just not my favorite. It wouldn’t be my first choice to make for dinner!!
These bars, though? I’d totally make them, and know that I’d love them!! Awesome post!! ❤

Thanks so much! I know what you mean about dinner. Sometimes I make what my son likes although it may not be my first choice for that nights dinner. I hope you are having a great week so far …it is almost Friday again! Haha! 🙂
