Okay, I have to be honest here …this was not my favorite pumpkin bar recipe.  Don’t get me wrong, there was nothing wrong with the recipe.  They turned out good …I mean they look yummy and they taste good, that is I did not mess up the recipe etc.  I guess I have never been a fan of smores and apparently it is no different with pumpkin smores.  I guess it is the marshmallow thing.  The only place I really like marshmallows is in my cocoa.  I did, however, think that minus the marshmallows they were quite tasty, so I decided to go ahead and post. Just because I am not 100% sold on the whole smores thing DOES NOT mean you should not try this recipe if you are a fan of smores.  Because ….

They have the same ooey gooey marshmallows as smores and are full of the delicious taste of pumpkin and chocolate.  They are easy to make too! 🙂

They are definitely moist and gooey.  I think they would be fun to make for Halloween.  Perfect for the kids …what kid doesn’t like chocolate and marshmallows, right?!

Pumpkin Smores Bars

Makes 24 bars

Ingredients

1/2 cup butter, softened

1 cup brown sugar

1 cup pumpkin puree

2 eggs

1 teaspoon vanilla extract

2 teaspoons baking powder

1/2 teaspoon salt

1 3/4 cup flour

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 cups chocolate chips

1 bag caramel vanilla marshmallows

Directions

  1. Beat the butter and sugar until creamy. Add the pumpkin, eggs and vanilla and beat again.
  2. Stir together the baking powder, salt, flour, cinnamon, and nutmeg. Slowly add to the butter mixture until a soft dough forms. Spread in a greased 9×13 baking pan.
  3. Bake at 350 degrees for 24 minutes. Remove from the oven and sprinkle the chocolate chips evenly over the top of the hot bars. Cover the chocolate chips with the marshmallows. Return to the oven and bake another 2 minutes. Turn on the broiler and broil for 1-2 minutes. You just want the marshmallows to start turning golden, so do not over broil them. Remove from the oven and cool completely.
  4. Use a wet knife to cut the bars into 24 squares. Be sure to wet the knife in between each cut. The water on the knife keeps the marshmallow from sticking.

  1. I’m a fan of s’mores, its the only time I like marshmallows is when it toasted or else its just chewy sticky pillows of sugar, nice touch with the pumpkin, perfect for the season, thanks for sharing:)

  2. Haha! Arl…who says we have to love everything we make? I totally understand what you mean, and I’m so glad you still shared them with everyone. I have meatloaf in the oven, and while I know that it’s really good. it’s just not my favorite. It wouldn’t be my first choice to make for dinner!!
