Cream Cheese Butter Cookies

These wonderful little buttery cookies are made with a cake mix, hard to believe because they are so good.  Now I know what some of you are thinking …you don’t use cake mixes, cake mixes are not really baking, etc. Well, for me, the jury is still out.  I mean I am on the fence about it ….cake mixes are quick and easy and just what you need in a pinch.  But then there is nothing like a cake made from scratch, like Tyler’s Kit Kat Cake, so moist and chocolaty …you can’t beat it.

 

I love the taste of a cake cookie and this recipe does not disappoint.  These cookies remind me of sugary biscuits.  They are so light and fluffy and full of that wonderful buttery, cream cheese taste and with a touch of powder sugar …perfection.  Well cake mix or not …do or don’t, it is hard to say.  But one little boy I know gave this one a thumbs up! 😉

Cream Cheese Butter Cookies

makes 2 dozen

Ingredients

1 (8 ounce) pkg cream cheese

1/2 cup butter softened

1 egg

1/4 tsp vanilla extract

1 box yellow butter cake mix

1/2 cup confectioners sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1 inch balls and roll the balls in the confectioners’ sugar. Place 1 inch apart onto an ungreased cookie sheet.
  3. Bake for 10 to 13 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.
