Chocolate Cake with Whipped Cream Cheese Icing

Happy Fiesta Friday everyone!!  It has rained here a lot lately.  What do I do when it rains on a Sunday afternoon?  I bake!  This is a basic chocolate cake recipe.  It is great to make with the kids or grandkids, perfect for a rainy Sunday.  It is a really easy and quick one bowl recipe, but don’t let this fool you.  This cake is so moist and delicious …and oh so chocolaty.  I decided to make a cream cheese icing and decorate with some delicious strawberries.  Yummy!  🙂

Chocolate Cake with Whipped Cream Cheese Icing

Ingredients

2 cups white sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot water

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine-inch round pans.

  1. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  2. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

Cream Cheese Icing

Ingredients

Original recipe makes 3 cups

2 (8 ounce) packages cream cheese, softened

1/2 cup butter, softened

2 cups sifted confectioners’ sugar

1 teaspoon vanilla extract

 Directions
  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.

  1. I love baking when the weather’s bad, too. It warms up the house and gives me something to do other than get depressed about the weather. This chocolate cake would cheer me right up when it’s raining out. Looks so moist!

    1. Thank you so much! Yes, I am liking the naked cakes lately. It is usually plenty sweet without the extra icing and so much easier to frost. I made another one yesterday for my son’s BDay & FF. 🙂 Happy FF!

  4. Currently on a sugar-free diet – but saving it for later 🙂 Did I see some kind of chocolatey layer between two cake layers? How would you make that, being extra decadent?
