Red, White and Blueberry Mini-Cheesecakes

I am feeling quite festive, it is Friday and I am off for the next four days from work.  Yay Me!  I am starting my Fiesta Friday 4th of July off right with good food and good friends.  Todays menu consists of Barbecue Ribs, Potato Salad and Baked Beans …maybe a vegetable salad of some sort.   When I asked my son what I should make for dessert he said, without any hesitation, cheesecake please!  I decided this was an excellent choice not only for our 4th of July dessert, but also for Fiesta Friday over at Angie’s, The Novice Gardener.  So come on over, will you join us?

Red, White and Blueberry Mini-Cheesecakes

  • Servings: 24 mini cheesecakes

Ingredients

1 cup graham cracker crumbs

3/4 cup plus 2 tbsp. sugar, divided

4 tbsp. butter or margarine, melted

2 (8 ounce) packages cream cheese

2 eggs

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins with miniature paper liners.

Mix graham crumbs, 2 Tbsp. sugar and butter; press onto bottoms of paper-lined muffin cups.

In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until smooth and creamy. Fill each miniature muffin liner with this mixture, almost to the top.

Bake 15 to 20 min. or until centers are almost set. Cool completely. Refrigerate 2 hours.

Top with blueberries, strawberries and whip cream
