Summer is here and Fourth of July is just around the corner, that means time for backyard cookouts with delicious foods and good friends. This little salad is light and tasty and welcome at any summer gathering. A perfect salad to bring for our Fiesta Friday Party over at Angie’s, The Novice Gardener. Come on over, it is party time! 🙂
Summer Salad
Makes 10 servings
Ingredients
1 box pasta
1 cup finely chopped or shredded carrot
1 package(s) (10-ounce) frozen baby peas , thawed
1/2 cup salad onion
1/2 cup chopped tomatoes
1/4 cup finely chopped green pepper
freshly ground black pepper to taste
Dressing
3/4 cup mayonnaise
1/4 cup sugar
Directions
Stir to dissolve sugar. Combine with pasta mixture to coat; cover and refrigerate overnight. Give an occasional stir to join all flavors and stir before serving.
Variations: Add shredded cheese and bacon or ham

We love pasta salad or potato salad in this house! I don’t know why I never thought of adding more veggies into ours, always making plain ones, but now that I’ve seen how refreshing yours look, I’m going to incorporate more veggies into mine. Thanks, Arlene! 🙂
