Meatloaf was always served regularly at my house growing up. It was a weeknight favorite, especially with the men in our house. I think there are just some recipes that are more man pleasin’ and some that are more suited to us women folk. Don’t get me wrong though, none of the women in our family passed up my mom’s meatloaf either! Years later I am still using mom’s recipe and preparing this for my family.
What do you do when your son wants meatloaf and you want spaghetti and meatballs? The compromise …make meatloaf meatballs with brown rice, yummy! 🙂
Meatloaf balls with Brown Rice
Ingredients
~Meat
1lb lean (at least 80%) ground beef
1/2 cup bread crumbs
1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 small onion, finely chopped (1/4 cup)
- 1 egg
- 1/4 cup milk
- 1/2 cup cheese
- 1/4 cup ketchup
- 1/2 teaspoon Worcestershire sauce
- 1 tsp mustard
- ~Sauce

2 tablespoons brown sugar
2 tablespoons prepared mustard

1/3 cup ketchup
- Directions
Heat oven to 400°F. Line 13×9-inch pan with foil; spray with cooking spray.
In large bowl, mix all meat ingredients. Shape mixture into 20 to 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
Bake uncovered 20-25 minutes or until no longer pink in center.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and spoon over the meatballs; place meatballs back in the oven and bake for 5 more minutes.
Serve with brown rice.

Haha! Thanks Lori! My son does not like meatballs, so this is what I told him. “This is just like my meatloaf, it will taste just the same …the only difference is I made balls instead of a loaf” He loved them. I have to be creative Lori with a picky eater. 😉

I understand! My son doesn’t like meatballs. Will not eat them in spaghetti. So I told him “this is just like the meatloaf mom makes, only difference is instead of the loaf they are meatloaf meatballs. But they taste exactly the same.” He loved them! You have to get creative. Ha!
