One of my favorite foods in the world is Peanut Butter, and of course than there is Chocolate …Not always together, but hey, isn’t the combination awesome! It is no surprise that this is my favorite cookie recipe!
I have always enjoyed watching my Mom bake. She is the best! As a little girl, I can remember standing beside her in the kitchen while she spun her magic. From homemade Kolaches, Cinnamon Rolls, Pies, Cakes and Cookies …Everyday, the kitchen was filled with the wonderful aromas. One of my favorite recipes of hers, for cookies, is her Peanut Butter Oatmeal Chocolate Chip Cookies. This is my absolute favorite type of cookie!
What is not to love about these thick and chewy, moist, oat filled, best ever cookies, with huge pieces of chocolate and peanut butter morsels. Yummm …taste the goodness!
Oatmeal Peanut Butter Chocolate Chip Cookies
Ingredients
2 1/2 cups old-fashioned oats
2 cups all-purpose flour
1/2 cup granulated sugar
1 cup brown sugar
1 teaspoon baking soda
1 teaspoon salt
1 cup canola oil or melted coconut oil (use a little more if dough seems a little dry)
2 large eggs
3 teaspoons vanilla extract
1 teaspoon honey
2 cups semi-sweet chocolate chips
1/2 cup peanut butter chips
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or spray with cooking spray.
- In a large mixing bowl add the oatmeal, flour, sugar, brown sugar, baking soda, salt, canola oil, eggs, vanilla and honey; beat until the dough is moist and all the ingredients are combined. Mix in the chocolate chips and peanut butter chips.
- Drop by spoonful, about a tablespoon of dough, on prepared baking sheet.
4. Bake for 10 -12 minutes or until set and golden. These are best right out of the oven, enjoy the yummy goodness!
These look delicious! Chocolate and peanut butter is one of my favorite combos too, and in my opinion, the more chocolate chips, the better!!

I make oat & chic chip cookies, but have never thought of adding peanut butter – they look more gooey and yummy than mine, though. Guess what we will be baking at the weekend!
